Gluten Free Green Piña Colada Recipe
This refreshing green smoothie is a great post workout drink. It is hydrating, full of good greenness and a nice little dose of fat. I like to think of it as a green Piña Colada, or a “Greeña Colada.” I feel so healthy drinking it!
- 1 large cucumber, peeled and chopped
- ¼ cup water
- ½ cup parsley
- ½ cup frozen pineapple chunks
- 1 tablespoon coconut oil
- 5 drops stevia
- 4 ice cubes
- Place cucumber and water in a vita-mix and process on high until liquid
- Add parsley, pineapple, coconut oil, stevia and ice and blend until smooth
- Serve
