Tropical Chicken Salad Recipe
My ‘Tropical Chicken Salad’ made with mango and a mayo yogurt combo pineapple dressing is great for sandwiches, tortilla/lettuce wraps or added to a bowl of salad greens. Great for those hot summer months when your in the mood for a cool dinner treat that’s not too heavy.
- 5 Medium grilled boneless skinless chicken breasts, cubed
- 1 'Heaping' Cup chopped dried mango
- 3/4 Cup toasted macadamia nuts
- 3/4 Cup chopped water chestnuts
- 2 Tablespoons mayo
- 2 Tablespoons plain yogurt
- 4 Tablespoons crushed pineapple in heavy syrup
- In a large bowl combine cubed chicken, chopped mango, chopped macadamia nuts, and chopped water chestnuts and mix well.
- In another bowl combine mayo, yogurt & crushed pineapple and whisk or stir till blended well.
- Add dressing to chicken mixture and stir to coat entirely.
