Garden Sausage Quiche Recipe

I came up with this recipe to accomodate several dietary restrictions suffered by a few friends. You can vary the ingredients from the substitutes to the usual ingredients at will, making it just waht you and your diet need.

INGREDIENTS
  • 2 C finely chopped pecans
  • 2T olive oil
  • 1/2 C shredded soy based cheese substitute (swiss or sharp cheddar flavor)
  • 2 T olive oil
  • 1/2 C chopped shallot
  • 10 oz mushrooms (your favorite), thin sliced
  • 4 green onions, sliced thin
  • 1/2-1 jalapeno, seeded and minced fine (optional)
  • 1 pound soy sausage, breakfast style
  • 1 1/2 C soy milk
  • 8 large eggs, lightly beaten
  • 1/2 t salt
  • 1 t fresh ground peppercorns (mixed is best)
  • 2 T olive oil
  • 2 T finely chopped fresh thyme
INSTRUCTIONS
  1. Mix first three ingredients and press on bottom and partly up sides of 2, 9" or 10" deep dish pie plates
  2. Bake at 350 for 10 minutes.
  3. In large skillet over medium heat, sautee mushrooms, shallots and green onions for a few minutes until just soft.
  4. Crumble sausage into skillet and heat through.
  5. Remove from heat and pour into mixing bowl
  6. Add remaining ingredients, in the order given, and stir to combine.
  7. Very gently (to not disturb the nut crust) LADLE the egg mixture into the crusts.
  8. Bake at 350 until set, 25-30 minutes.
