Nothing rounds out a meal better than a well-made salad. This spinach salad would be great alongside roasted pork or a filling soup.

INGREDIENTS
  • 1/4 red onion, thinly sliced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 5 cups baby spinach (about 5 ounces)
  • 1 medium Bosc pear, quartered and thinly sliced
INSTRUCTIONS
  1. Place onion in a small bowl of ice water and let sit for 10 minutes.
  2. Meanwhile, place mustard, vinegar, water, oil, honey, salt, and pepper in a medium nonreactive bowl and whisk until combined.
  3. Strain onion from ice water, pat dry, and place in a large nonreactive bowl. Add spinach, pear, and 3 tablespoons of the dressing and toss until evenly coated. Taste, season with salt and freshly ground black pepper, and add more dressing as desired.

  • I don't know where you guys live or shop, but I have found it impossible to buy nice, sweet onion, red or white. The last year or maybe more, the onions I have been buying are bitter and very strong, and I love onions. I shop mostly in San Francisco at Safeway, Mollie Stones, and Whole Foods.

    I have been forced to soak the onions that I use raw, or the bitterness and sharpness overtake the food....+READ

    After having 'Onion Goggles" in the drawer for ages, I finally decided to try them.... they are fabulous and really work. They also make a fashion statement, but only wear them in the privacy of your own kitchen!-COLLAPSE

  • Ha, I'm going with, "it'll taste just fine without soaking" (the easier the better, and it'll still be good, right?). I make a similar salad, and add some poppy seeds to the dressing. So classy. And I've noticed that if I slowly whisk the oil into the other ingredients, it gets quite nicely emulsified- a perfect dressing.

  • Isn't that the point of adding onion, to balance the pear? Red onions aren't very sharp - in fact nowadays it's hard to find a sharp onion at all.

  • i treat the onion to an ice bath when they are too sharp ( ie have a bite) or too strong in taste.
