INGREDIENTS
  • 2 tablespoons olive oil
  • 1 tablespoon sherry vinegar
  • 2 teaspoons minced shallots
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 cups mixed greens (about 4 ounces)
  • 1 cup halved grapes
  • 1/3 cup toasted, coarsely chopped almonds
  • 1 ounce shaved sharp cheddar cheese
INSTRUCTIONS
  1. Place olive oil, vinegar, shallot, garlic, salt, and pepper in a medium, nonreactive bowl and whisk to combine.
  2. Place mixed greens, grapes, almonds, and cheese in a large, nonreactive bowl. Drizzle with dressing and toss to coat. Serve immediately.

  • This is delicious and simple. Didn't have sherry vinegar so used apple cider vinegar with 1/2 teaspoon of sugar because I guessed that it needed a sweetener.
    Big problem - Michelle loved the grapes, the grapes tend to go to bottom bowl. Where did Michelle fossick for most of her salad? Clever you, you got it in one!
    I was a bit sceptical about almonds but they made this special. If you don't have the almonds don't make this until you do! Their crunch is very important.
    Had it with loin lamb chops cooked on very hot griddle wite red currant and mint jelly sauce on side. It made an ordinary meal super.

  • I make a salad similar to this only mine contains raspberry vinegar instead of the sherry vinegar, bit of fresh lemon juice and a combination of olive oil and canola oil as some members of my family are not fond of straight olive oil. Salad greens, raw califlower, green onions, radish slices, grapes and oranges are the base, toasted sunflower seeds & slivered almonds top it off.
    Its very good!
