Herbed Avocado Spread

Take mashed avocado to the next level with flavors reminiscent of Green Goddess Dressing. This spread tastes great on a BLT, grilled or roasted chicken, roasted vegetables, or a seared piece of halibut.

INGREDIENTS
  • 1 ripe avocado, medium dice
  • 6 teaspoons minced fresh chives
  • 4 teaspoons minced fresh Italian parsley
  • 1 tablespoon white wine vinegar
  • Pinch kosher salt
  • Freshly ground black pepper
INSTRUCTIONS
  1. Place the avocado in a medium, nonreactive bowl and mash with a fork until evenly broken up.
  2. Add the chives and parsley (or your other favorite herbs), vinegar, salt, and pepper to taste. Fold together until well combined.

    Perfect use for beautifully rich avocado. I'm a garlic freak so I also throw in several crushed cloves (depending on whether I have a date that evening).

  • What bread is that in your picture? A Ciabatta? It looks terrific. Do share? The details pls...the spread will go well with that look and I can even taste that bread from so far away!

  • This recipe is PERFECT for breakfast sandwiches - which I'm huge on right now! My favorite is egg and cheese with a super ripe avocado spread on a bagel or english muffin (better flavor than butter and super healthy!) Plus, avocados are perfect for breakfast b/c it keeps you full all day :)

  • Vinegar works though. I was amazed that even tomato adds enough acid to complement the avo flavor. I don't even use lemon, lime, OR vinegar! Try it- tomato goes so perfectly. Sometimes I chop the tomato, let it juice up, save the bulk of it for salsa, but use the juice created from chopping to add to the avo...

  • Wont last long in the fridge. If you put the pit in the bowl with the spread and press down plastic wrap on to the surface you might get a day or two but wont you eat it before that? I think citrus would be a nice touch instead of the vinegar.

  • you've got some restraint, fers. i fear i would be licking the empty bowl before refrigeration would ever be an issue.
