Garlic-Mint Yogurt Spread Recipe

This refreshing, tangy spread gives a Mediterranean slant to whatever it tops. Try it with fries, on a burger, or as a dip with grilled calamari.

INSTRUCTIONS
Combine 3/4 cup packed fresh mint leaves, 1/2 cup plain Greek yogurt, 1 medium coarsely chopped garlic clove, 1 teaspoon freshly squeezed lemon juice, and 1/4 teaspoon kosher salt in a food processor fitted with a blade attachment and process until smooth.
Just looking at it makes me so hungry. But there is no mint to be had in February. It won't be the same, but I think I will make it using parsley.
This is a terrific recipe. It's similar to Indian mint yogurt that you normally get from Indian/Pakistani restaurants. I would add slices of cucumber after blending in a food processor.
