Whipped Feta Spread

Like a Greek salad made spreadable, this feta spread would make a good addition to your next salad or grilled veggie sandwich, on toast with some cucumbers, or simply as a dip served with pita chips.

INGREDIENTS
  • 8 ounces feta
  • 3 tablespoons olive oil
  • 4 teaspoons minced fresh mint
  • 1 teaspoon lemon zest (from 1 medium lemon)
  • 1/2 teaspoon freshly ground black pepper
INSTRUCTIONS
Crumble the feta into a food processor fitted with a blade attachment. With the motor running, stream in the olive oil. Add the remaining ingredients and pulse to combine.

Variation: Stir in a few spoonfuls of harissa after adding the oil.

    I'm thinking of halving the feta & substituting canned rinsed cannelli beans for more fiber & protein & less salt, maybe parsley with the mint too. Plus, may use the simply naked brand pita chips on hand. If I were doing a party, I'd do like photo adding slices of cherry tomatoes & kalamata or black olive for "pops of colors" other than the fresh herbs.
