INGREDIENTS
  • 3 medium heads endive
  • 3/4 cup small-dice feta cheese
  • 2 cups small-dice pear
  • 1 1/2 teaspoons lemon juice
  • 1 tablespoon olive oil
  • 3/4 teaspoon ground coriander
  • Salt
  • Freshly ground black pepper
INSTRUCTIONS
  1. Trim the ends off the heads of endive and remove the leaves (you will need 30 to 40 leaves); set aside.
  2. Gently toss the feta, pear, lemon juice, olive oil, and coriander in a medium bowl until evenly coated. Season with salt and pepper and toss to coat well.
  3. Place 1 tablespoon of the cheese-pear mixture in each endive leaf and serve immediately.

  • al contadino non far sapere quant'è buono pere e pecorino! in Italy pears are always peared with pecorino - ther's even a proverb, don't let the farmer know how good pears with pecorino are ....or he'll eat them all!

  • I'm a big fan of endive with orange segments and goat cheese, drizzled with a blend of balsamic vinegar and honey. Toasted walnuts are nice on this, too.

    Feta strikes me as kind of salty and sharp for pears, but maybe you're onto something here...

  • Mm-mm, pears and feta. With endive! For a really attractive presentation, you could thinly slice pears, toss with the seasonings, fan out on the endive and crumble the feta over.
    Or the other thing.
