Sweet Potato Pie Recipe
Every Thanksgiving I give these pie treats out to friends and neighbors as thankful gifts!
Everyone always complements me on the taste, and many didn’t even realize it was made out of potato’s!
This recipe makes two pies
- 8- sweet potatos
- 1- stick of butter melted
- 2- pie shells (NO DEEP DISH)
- 1- small can of evaporated milk
- 1-teaspoon of vanilla
- 3-eggs
- 2-cups of sugar
- 1 1/2 tsp cinnamon
- Pre-heat oven 375
- Cut sweet potato’s into slices, then put in a large pot and boil until soft and able to mash. (15-20 minutes) PEEL THEM!
- Mash sweet potato’s in a large bowl. Mix with and eletric beater to smooth out, it is okay if there are a few lumps. They should be soft, not hard.
- Mix all ingrediants into mashed sweet potato’s
- Place pie shells on a baking sheet (both pie shells on the same baking sheet)
- Pour mixture into pie shells
- Wrap the edges of pie shell with aluminum foil to prevent the edges from burning. Or use pie shield.
- Bake in oven for 1 hour!
