Mexican Salsa Recipe

A great salsa for chips, tacos, eggs, etc.

INGREDIENTS
  • 4 Roma tomatoes
  • 2 Jalapeno peppers (can adjust depending on how spicy you want)
  • 1 clove garlic
  • 1 slice bacon
  • 1 small bunch of cilantro (chopped)
  • 1 tablespoon lard or oil (olive, corn, or peanut)
  • 1 teaspoon salt or more to taste
INSTRUCTIONS
  1. Place whole tomatoes, whole peppers, whole garlic clove, and bacon and oil/lard in a partially covered skillet at medium/high heat. Remove garlic clove when soft and bacon when done.
  2. Once the tomatoes and peppers are slightly browned/blackened in places remove them from the skillet and place them along with the garlic, bacon, salt, and a tablespoon of the cooking liquid in the skillet in a blender or molcajete. Blend until slightly chunky (add garlic, peppers, salt, liquid, and bacon first, then the tomatoes).
  3. Pour the salsa into a small bowl and add the chopped cilantro and mix by hand. Enjoy!

  • Hi, thank you for that recipe. I have been trying to create a similar salsa kile King Taco's red salsa. I found a forum here under Home Cooking where many people have posted there recipes but there is still something missing. Of course, we'll never get it exactly the same as KT's but I'm hoping I can create on very, very similar. Does anyone have a recipe or any ideas that match the KT's salsa roja. It's sooooo good. I love that it makes me sweat. I also go to KT to purchase it. However they only sell it in a small cofee cup, seriously its small. It goes for $2.00 or so. Any way if someone can help, it would be greatly appreciated. Thank you, all.
