Basic Steamed White Rice Recipe
Involving nothing more than rice, water, and salt, steamed rice can still go wrong in countless ways. Here’s a stress-free method that yields fluffy, tender rice.
INGREDIENTS
- 2 cups long-grain white rice
- 2 1/2 cups water
- 1 teaspoon kosher salt (optional)
INSTRUCTIONS
- Place rice in a fine-mesh strainer and rinse under cold water until the water runs clear.
- Place rice and measured water in a medium saucepan with a tightfitting lid and bring to a boil over high heat. Add salt (if using), stir to incorporate, cover, and reduce heat to low. Simmer undisturbed until rice is tender, about 15 minutes. Remove from heat and let sit covered to steam, about 5 minutes. Fluff with a fork and serve.
The old Joy of Cooking said cups rice to two cups water.
BUT here's another way to make rice I discovered when I had to turn off the fire a couple minutes after it started to boil.
Do that and you'll have rice that has no sign of scortching or being hard on the bottom, but nice and fluffy with NO timing or watching.
I came back a day later and found the rice still perfect. It's also ready in about the normal time of 20, 25 minutes. Just doesn't need to be over fire. Easy and thoughtess.
