Open-Faced Toasted Tomato Sandwich Recipe

A simple sandwich of hearty bread, creamy cheese, and ripe-as-can-be tomatoes is great as a snack, but would be equally delicious alongside a salad for a light lunch.

Thinly slice a few pieces of Brie or Camembert cheese and set aside. Toast a piece of pain au levain or whole-wheat bread and top with butter. Layer on the cheese and top with 1/4-inch-thick slices of ripe heirloom tomatoes. Sprinkle with sea salt and freshly ground black pepper and serve.
I agree with Striper/Window. They gave detailed instructions to this "recipe" in my inbox today. One line would have covered it: "Heirloom tomatoes, and brie or Camembert cheese meld especially well on freshly toasted bread." The "recipe", not including the description, etc. is twice as long as that line.
Love tomatoes and cheese on toast, though (and my way of describing it is much shorter! (lol.)
This is better if you put the mayo on after toasting one side then the tomato then the cheese and toast under the broiler un til yhe cheese melts!
I just did a version of this yesterday. Fresh bread from the oven, sliced with a little butter. I sprinkled basil and garlic, layered thinly sliced tomatoes and topped with gruyere (I'd use whatever cheese I had in the fridge). Then I put it under the broiler for a few minutes. So yummy! The tomatoes were from a local organic farmer. Fantastic.
This is delicious. I think the point of this sandwich is that summer tomatoes don't need a complicated setting to be enjoyed at their best.
Guess I'm with Striper Guy. For one thing, this isn't a "toasted tomato" sandwich - it's a piece of toast with some cheese and some tomatoes plopped on top. Simple is fine, unusual combinations are better. This is pretty ordinary.
Substiutute pesto for the butter and amp up the taste.
Maybe there's also substitute for StriperGuy's sarcasm. Nothing wrong with simplicity at my table.
