These soft, chewy oatmeal cookies have the added bonus of chocolate chips and a hint of cinnamon.

INGREDIENTS
  • 1 1/4 cups all-purpose flour
  • 1 1/4 teaspoons ground cinnamon
  • 1 1/4 teaspoons kosher salt
  • 1 teaspoon baking soda
  • 2 sticks (8 ounces) unsalted butter, at room temperature
  • 1 1/4 cups packed dark brown sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1/4 cup whole milk
  • 3 cups old-fashioned oats
  • 2/3 cup semisweet chocolate chips
INSTRUCTIONS
  1. Heat the oven to 350°F and arrange a rack in the middle. Place flour, cinnamon, salt, and baking soda in a medium bowl and whisk to combine.
  2. Place butter and brown sugar in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium high until light in color and fluffy, about 3 minutes. Add eggs and vanilla extract and beat until completely incorporated, about 1 minute. Stop the mixer and scrape down the sides of the bowl.
  3. Add 1/2 of the flour mixture and beat until just incorporated. Add 1/2 of the milk and mix until just incorporated. Continue with remaining flour mixture and milk, mixing until ingredients are just incorporated and smooth. Remove the bowl from the mixer and stir in oats and chocolate chips.
  4. Drop dough by level tablespoons onto a baking sheet, spaced 1 inch apart. Bake until golden brown on the edges, about 11 to 12 minutes. Immediately transfer cookies to a wire rack and let cool completely.

  • i added macadamia nuts =D and since i don't have a mixer, i mixed everything using a whisk and muscle strength haha. they came out very nicely

  • I'd never used milk in these cookies before, but I gave it a try and ended up with kind of a disaster. The dough was almost runny, and my cookies ended up more like big flat cookie chips than the cakey goodness described in another comment.

    I don't have a mixer, so I did it all by hand. Could that have made the difference? Anyway, the taste is right-on, but next time I'll skip the milk and...+READ

  • They came out very soft, almost like tiny oatmeal cakes....Nice flavor, and I have to say I've never had a fluffy oatmeal cookie before. If you want a cookie crunch, these are probably not for you, but if you like the hearty depth of oatmeal and a soft cakelike treat, bake 'em!
