Barbecue Sauce a la Emil Villa’s Recipe

Difficulty: Easy | Total Time: 5 minutes | Active Time: | Makes: 1 cup of sauce

This is an attempt to recreate the unique BBQ sauce from Emil Villa’s on Telegraph Ave in Berkeley from a couple of decades ago. The texture is correct, but my taste memory is rather vague. Course, like any sauce, you can add your own touches: lots of hot chile peppers, Mexican oregano, more vinegar, mayo, etc. The key to this recipe is that it does not rely on tomatoes for texture or as a major flavor component.

INGREDIENTS
  • 1 cup water
  • 1/2 teaspoon ‶Better Than Bouillon - Beef Base″
  • 1 teaspoon commercial BBQ sauce (I used Hunt’s)
  • few grinds of fresh black pepper
  • 1/4 teaspoon cider vinegar
  • 2 teaspoons cornstarch
INSTRUCTIONS
  1. Combine all ingredients in a microwave safe bowl
  2. Heat on high for 2 minutes, stirring halfway through.
  3. If it does not have an oily, slightly thickened texture (think bottled oil & vinegar dressing), heat an additional minute and stir. Repeat if necessary.
  4. Sauce may be refrigerated and re-heated

  • I made a first attempt at this great sauce. Sadly, it seems to exist only in the minds of those lucky enough to have had it 30 or more years ago. YMMV, but I thought it was a couple steps in the right direction. I would love to hear what others think.

    EASY VERSION:

    Two cups water

    1/4 cup red wine
    1/8 to 1/4 cup dill pickle juice (depends on strength)
    Pepper to taste (I use about 1/4 tsp)
    3/4 Tsp Liquid Smoke
    1/2 Tsp Kitchen Bouquet
    AND - a shot of Bullseye Barbecue sauce to taste!

    Boil water and whisk in gavy powder. Add all other ingredients and whisk while heating. Simmer for 30 to 60 minutes.

    It is close, but not quite there. Ideas anyone???-COLLAPSE

  • I don't remember any 'meat oils' running around on top of the sauce. Sure it had the flavor. Would they have strained it all off? That's a lot of work, i know....

  • Hi! Clue me in....I've been trying for years to find the brown gravy sauce recipe. The Emil Villas here in Concord closed many years ago and I can't find the recipe for the sauce. We have a Barney's Hickory Pit here but it's just not the same. The gravy is tooooo brown.     Hi! Clue me in....I've been trying for years to find the brown gravy sauce recipe. The Emil Villas here in Concord closed many years ago and I can't find the recipe for the sauce. We have a Barney's Hickory Pit here but it's just not the same. The gravy is tooooo brown. If anyone can give me a clue where to start I'd be very happy........I don't like tomato, sweet, sticky BBQ sauces so I always loved their sauce. Dipping the french fries and all! Their side salads always the best with ranch dressing. And did you ever try their prawns? To die for! I've tried different methods to make the sauce but just can't get it.   • Close,....But I think they had a hint of Dill Pickle juice in the background on Emil Villa's original "brown" BBQ sauce.

  • Sorry, technical glitch. I was trying to add the this sauce is not like a commercial sauce that is thick, gloppy, or goopy. It has a rather oily, thin texture sort of like salad dressing.
