This is a great make ahead vegatarian burger like meal. Packed full of healthy ingreadients, low fat and calories, with a spicy kick.
INGREDIENTS
- 1 1/2 cups cooked brown rice 1 cup sauteed mushroom (in 1tsp butter and little red wine) 29 oz can black beans-drain and rinse 15 oz can diced tomatos (liquid reserved) 3 cloves diced garlic 1 cup of each of the following three oatmeal diced sweet potatos diced red bell pepper 2 chopped scallions 1 chopped chili pepper 1 diced carrot 3/4 cup fresh parsley 1 tablespoon of each, cumin and all purpose seasoning mix 1 teaspoon salt 1/2 tsp pepper 1/4 tsp of each, dried basil and thyme
INSTRUCTIONS
- after cooking the rice and the mushrooms, mix all the ingredients in a large bowl, with hands, smooching together like you would meat loaf.
- cook in the oven at 350 (preheated) for 35 to 45 minutes
- serve as patties in a bun or slice as meatloaf-this is even better the next day.
