Buddig Fix Quix Chicken Pita with Yogurt Sauce Recipe

The flavorful varieties of these pre-cubed, individually packaged deli meats can easily be added as a healthy protein to salads, wraps, casseroles, pastas, omelets or eaten alone for a perfectly portioned snack on the run.

INGREDIENTS
  • 1 container Fix Quix Grilled Chicken Cubes
  • 4 grape or cherry tomatoes, sliced
  • 3 tablespoons thinly sliced cucumber
  • 2 tablespoons thinly sliced red onion
  • 1/4 cup lettuce leaves
  • 1 (7-inch) pita bread, wheat or whole wheat, heated if desired
  • 1/4 cup fat-free plain yogurt
  • 1 tablespoon minced cucumber
  • 1 tablespoon minced green onion
  • 1/16 teaspoon salt
  • 1/8 teaspoon black pepper
INSTRUCTIONS
  1. Combine Fix Quix Grilled Chicken Cubes, tomatoes, thin-sliced cucumber and red onion and lettuce in a medium bowl. Toss gently to combine.
  2. Spoon chicken mixture over pita bread. Fold pita bread in half, packing in filling.
  3. Stir together yogurt, minced cucumber, green onion, salt and pepper in a bowl. Serve yogurt sauce on the side for dipping the sandwich. Serve with fresh fruit if desired.
