Chewy bars loaded with the classic Rocky Road trio of marshmallows, chocolate, and nuts.

INGREDIENTS
  • 1 1/4 cups semisweet chocolate chips (about 7 1/2 ounces)
  • 12 tablespoons unsalted butter (1 1/2 sticks)
  • 1 1/2 cups granulated sugar
  • 3 large eggs, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon kosher salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups packed mini marshmallows
  • 1 1/2 cups coarsely chopped roasted, salted almonds
INSTRUCTIONS
  1. Heat the oven to 350°F and arrange a rack in the middle. Coat a 13-by-9-inch baking dish with butter; set aside.
  2. Combine 3/4 cup of the chocolate chips and all the butter in a small saucepan. Cook over low heat, stirring constantly, until melted, about 8 minutes. Remove from heat and let cool slightly.
  3. Whisk sugar, eggs, vanilla, and salt in a large bowl until eggs are broken up and smooth. Add chocolate mixture and stir to combine. Add flour and baking powder and stir until just incorporated. Add 3/4 cup of the marshmallows and 3/4 cup of the almonds and stir to combine.
  4. Transfer batter to the prepared dish and spread evenly. Bake until a toothpick inserted in the center comes out mostly clean, about 25 to 30 minutes. Remove from the oven.
  5. Move the rack to the top of the oven. Sprinkle remaining chocolate chips, marshmallows, and nuts over the surface of the batter. Return to the oven and continue baking until marshmallows are puffed and golden brown, about 10 minutes more. Remove from the oven and cool completely on a wire rack before cutting.

    The taste was great; the texture could have been better, but I think that was my fault. I wanted to use up a lot of fruit-flavored mini marshmallows, so I used only marshmallows in the batter (substituted for the almonds). Also, my oven doesn't broil, so I waited really long for the marshmallows on top to brown. As soon as the bars were out, they were too chewy (probably because of the extra marshmallows), but from the next day, they seemed okay, if a little dry (probably because of baking too long). I also reduced the sugar to just over a cup, and used salted peanuts again instead of almonds. Bottom line - they were yum so I may make again if I have to use up marshmallows.

  • These were delicious, I am sending the recipe to a friend. I melted the butter in the microwave then added the chips and waved the chips for 30,worked great!

  • Wow, these were delicious. Followed the recipe exactly and they turned out fantastic. Not too sweet, a nice balance of sweet, salty, nutty. Highly recommended!

  • 10 minutes more and yes I would try 325 degrees next time

  • shaebones, would you suggest 325 and for a longer time? How much longer would you estimate? Or rather, how much longer did you have to cook them at 350?

  • I was dying to make these. Results a little disappointing. Had to bake it longer b/c the middle was undone @30 minutes. When it was done , the bottom was burned...not terribly though. Will set at a lower temp if I make them again.

  • Can I reduce the amount of sugar? These sound great but, a little too sweet.
