Gluten Free Vegan Vanilla Ice Cream Recipe

I’ve been making this gluten free vegan vanilla ice cream for the last couple of years. Way back when in my New York days, my raw food friends turned me on to the fact that cashews make an amazing substitute for dairy. I love this ice cream and have been known to chow on it late night :-)

INGREDIENTS
  • 1 cup cashews
  • 2 cups water
  • ΒΌ cup agave nectar
  • 1 tablespoon vanilla extract
  • 1 pinch celtic sea salt
INSTRUCTIONS
  1. In a blender, combine all ingredients and blend on high speed
  2. Pour mixture into an ice cream maker and process according to instructions
  3. Serve
