This is a great soup which is hearty and a great start or partner for a grilled sandwich. There are many great grilled sandwiches out there. Have fun and experiment a bit.
The soup is creamy yet more substantial than just creamed tomato soup. I love fresh ingredients and it incorporates fresh tomatoes, ricotta dumplings and basil all from the summer crop.
- 1For the soup: Saute the onion, leek, garlic, red pepper flakes and spicy pepper which is optional. Cook until soft. Add the tomatoes and cook until well combined. Add the broth, parsley, basil, bay leaf, s/p and let simmer 15 minutes. Add the sherry and cream and simmer until warm. Now make the dumplings.
- 2Mix the ricotta, basil, flour and egg white, s/p. Mix until well combined. Turn the soup temp up to a semi boil. Not boiling, just a good medium simmer. Add small spoons of the dumpling mix and cook 15-20 minutes until the dumplings are firm.
- 3It is a hearty creamy soup, garnish with some fresh parsley and grated parm, It is a great hearty soup served with your favorite sandwich. How about a grilled cheese with a combo of cheddar, gorgonzola, roasted onions and tomatoes on pumpernickle with dill pickles. It is a great side sandwich which I love.
