Cucumber and Grapefruit Cocktail Recipe

Difficulty: Medium | Total Time: 20 minutes | Makes: 12 cocktails

Inspired by wonderful produce at my local coop, this crisp and cool cocktail is a great way to start off the summer party season. This yields enough to make about 12 cocktails, so bring it to a party!

INGREDIENTS
  • 4 cucumbers, peeled
  • 5 pounds red grapefruit, quartered and peeled
  • 1 handful mint leaves
  • 1 cup organic cane sugar
  • 2 cups water
  • crushed ice
  • vodka
INSTRUCTIONS
  1. Bring sugar and water to boil over medium high heat. Remove from heat and allow syrup to cool at room temperature.
  2. After peeling cucumbers and grapefruit, process cucumber, grapefruit and mint through juicer. Discard pulp and transfer juice to a pitcher.
  3. Add syrup to juice. Stir well
  4. Place 3 parts juice mixture and one part vodka in a cocktail shaker over crushed ice. Shake until frothy. Pour into a chilled cocktail glass or serve over crushed ice. Garnish with cucumber spear.
