Cucumber and Grapefruit Cocktail Recipe

Inspired by wonderful produce at my local coop, this crisp and cool cocktail is a great way to start off the summer party season. This yields enough to make about 12 cocktails, so bring it to a party!
INGREDIENTS
- 4 cucumbers, peeled
- 5 pounds red grapefruit, quartered and peeled
- 1 handful mint leaves
- 1 cup organic cane sugar
- 2 cups water
- crushed ice
- vodka
INSTRUCTIONS
- Bring sugar and water to boil over medium high heat. Remove from heat and allow syrup to cool at room temperature.
- After peeling cucumbers and grapefruit, process cucumber, grapefruit and mint through juicer. Discard pulp and transfer juice to a pitcher.
- Add syrup to juice. Stir well
- Place 3 parts juice mixture and one part vodka in a cocktail shaker over crushed ice. Shake until frothy. Pour into a chilled cocktail glass or serve over crushed ice. Garnish with cucumber spear.
