The best Bleu burgers Recipe

I came up with this recipe while in culinary school for a dinner party with my friends. These are my friend Bryon’s favorite burgers!
INGREDIENTS
- one pound lean ground beef
- 1 small yellow onion, finely chopped
- 1 shallot, finely minced
- 2 TB worcestershire sauce
- 1 tsp garlic powder
- 1 tsp steak seasoning
- 1 tsp salt
- 8 oz gorgonzola cheese
- 4 slices white cheese of your choice (havarti, provolone, monterey jack)
- 1 cup sliced mushrooms
- half cup port wine
- half onion, julienne
- 2 TB balsamic vinegar
- 2 TB butter
- 4 ciabatta rolls
- 2 TB olive oil (optional black truffle oil)
- salt and pepper to taste
INSTRUCTIONS
- mix onion, shallot, worcestershire, and seasonings with ground beef. Form 8 thin patties.
- place about 2 TB gorgonzola in the center of 4 patties. Cover each patty with remaining 4 patties to form 4 large hamburgers.
- In a hot pan, brown each hamburger on both sides and place on a cookie sheet. put a slice of cheese on each patty, and place in the oven at 35O degrees for 1O-12 minutes.
- in a separate pan, saute mushrooms in the port wine. season with salt and pepper. cook until mushrooms are soft and liquid has evaporated. set aside.
- in a separate pan, saute sliced onions in butter and balsamic vinegar. season with salt and pepper. cook until onions are soft and carmelized. set aside.
- brush oil onto ciabatta rolls and toast. assemble burgers with stuffed patties, onions, and mushrooms. add your favorite condiment!
