Exotic Spice Cookies Recipe
Unique but addictive cookies. The version here is the latest, and so far, most definitive one I have made, but requires another somewhat hard-to-find ingredient, mesquite flour.
- 1/3 cup granulated sugar
- 1/3 cup packed dark brown sugar
- 1/2 cup unsalted butter, room temperature
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1/2 tsp salt
- 2 1/2 tsp Szechuan peppercorn, finely ground
- 2 1/2 tsp ground cardamom
- 1 tsp ground allspice
- 3/4 tsp ground nutmeg
- 1/4 tsp ancho chili powder
- 1/4 tsp ground white pepper
- 1/4 tsp cayenne pepper
- 1 3/4 cups whole wheat pastry flour
- 2 Tbsp mesquite flour
- 2 tsp baking soda
- Preheat oven to 350 degrees.
- Sift flours, baking soda, salt, and spices in a bowl.
- In another bowl, combine sugars, butter and egg. Beat for 2 minutes on high speed. Then add the vanilla.
- Stir in flour and spice mixture until combined.
- Make cookies using 2 Tbsp of batter for each, spreading 2 inches apart.
- Bake for 9-10 minutes. Cool on wire rack.

I've learned something, too. I had just assumed that no one was paying any attention to my little corner of the Chowhound site, and I could use it to hack around with my own recipes. From now on, I will add new versions of recipes, rather than delete old ones. I think the spice mixture is key to the success of the recipe be it cake or cookies, but I could never get the cookies to come out the same way consistently which is why I tried the cake. Looking back, the cookies are better.
My hard drive crashed awhile back, but I was able to find the cookie recipe by Googling the recipe title and luckily finding it cached. I'm glad it wasn't lost forever. Here it is:
INGREDIENTS
1/2 cup butter, softenend
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 1/2 tsp pure vanilla extract
1 cup all-purpose flour
1/2 cup oatmeal, ground to flour consistencey
1 tsp baking soda
2 tsp hot water
1/2 tsp salt
2 1/2 tsp Szechuan peppercorn, toasted and finely ground
2 1/2 tsp ground cardamom
1 tsp ground allspice
3/4 tsp ground nutmeg
1/4 tsp ancho chili powder
1/4 tsp ground white pepper
1/4 tsp cayenne pepper
INSTRUCTIONS
Preheat oven to 350 degrees.
Cream together the butter, white sugar, and brown sugar until smooth.
Beat in the egg, then stir in the vanilla.
Dissolve baking soda in hot water. Add to batter along with salt.
Stir in flour and spices just until completely blended.
Drop by large spoonfuls onto ungreased pan.
Bake for about 10 minutes, until lightly browned.
These cookies are best served right away. Store for up to a couple of days in an airtight container.
I swear this link was for the exotic spice cookie recipe. While I will try this cake, which uses all the same spices I am desparate for the cookies. I will now always print out my favorite recipes as soon as possible. Can you please, help me? I do love them so!!
