Potatoepete's baked Potatoe Soup Recipe

A simple but elegant way to use your left over baked potatoes

INGREDIENTS
  • 1 Spanish Onion
  • 3 stalks of celery
  • 10 left over baked potatoes
  • 1/2 lbButter
  • 1 lb bacon cooked
  • 1 galCream
  • 1cup Flour
  • Spices: salt,white pepper, dill, garlic,
INSTRUCTIONS
  1. Chop your onions and celery fine and sautee in butter
  2. Peel potatoes and dice save skins
  3. Add potatoes to butter and sautee turning so not to scorch
  4. add flour and stir
  5. Add cream to thicken
  6. Add bacon and spices and let simmer
  7. To serve cut skins in small cubes, fry them and put on top of soup with spoon of sour cream and chives.
