    <![CDATA[<p>Coconut macaroons are so addictive that they&#8217;ve become a staple item in many supermarkets. But more of them only makes for more opportunities for mistakes. These cookies&#8212;chewy, sweet, crispy, and loaded with coconut flavor&#8212;raise the bar.</p>


	<p><strong>What to buy:</strong> Sweetened, shredded coconut is also known as <em>angel flake</em>.</p>


	<p><strong>Game plan:</strong> Waiting 4 hours for the dough to chill may seem like forever, but it is essential to let the dried coconut soak up the egg whites, giving you round, fluffy cookies instead of flattened disks.</p>]]>

	<li>Fill a large saucepan with 2 inches of water and bring to a boil over high heat. Reduce heat to low so water is just simmering.</li>
		<li>Whisk together sugar, egg whites, honey, vanilla, and salt in a large glass or metal bowl. Set bowl over simmering water and heat egg white mixture, whisking frequently, until the sugar has dissolved and the mixture looks thicker, paler, and is hot to the touch, about 8 to 10 minutes.  </li>
		<li>Remove bowl from heat and stir in coconut and flour. Cover and refrigerate dough at least 4 hours or overnight.  </li>
		<li>When ready to bake, heat oven to 350ºF and arrange a rack in the middle. Line a baking sheet with parchment paper. Stir dough, then drop rounded tablespoons onto the prepared baking sheet, about 2 inches apart.  </li>
		<li>Bake until golden brown all over and set in the centers, about 12 to 15 minutes. Transfer to cooling rack to cool completely. Repeat with remaining dough.</li>
