Asparagus Frittata Recipe

INGREDIENTS
- 1 lb. asparagus, trimmed
- 2 eggs
- olive oil spray
INSTRUCTIONS
- Bread off hard part of asparagus and discard. Wash well with cold water.
- Cook asparagus in boiling water for about five minutes, depending on size. drain and set aside.
- Beat eggs in bowl and add asparagus. Season with salt and pepper if desired. Coat pan with spray and heat. Add asparagus a few at a time. Brown on one side then turn over and brown on other side.
