Asparagus Frittata Recipe

INGREDIENTS
  • 1 lb. asparagus, trimmed
  • 2 eggs
  • olive oil spray
INSTRUCTIONS
  1. Bread off hard part of asparagus and discard. Wash well with cold water.
  2. Cook asparagus in boiling water for about five minutes, depending on size. drain and set aside.
  3. Beat eggs in bowl and add asparagus. Season with salt and pepper if desired. Coat pan with spray and heat. Add asparagus a few at a time. Brown on one side then turn over and brown on other side.
