Simple Sundried Tomato Spread Recipe
This is an all time favorite!
Sandwich spread, for grilled or baked meats, fish or poultry and pork, on baguettes or grilled breads or as an appetizer with a basil pesto cream cheese. Use this to top zucchini grilled, eggplant, onion slices. Endless combinations.
I serve this often with my basil pesto cream cheese. Now make your own pesto, but when in a hurry I use a block of cream cheese softened and add a few spoons of store bought pesto to I like the flavor. It is a great easy combo.
- 3/4 cup sundried tomatoes packed in oil chopped, 2 - 6 oz cans tomato paste, 1/4 cup oil from the sundried tomatoes and any additional olive oil to make 1/4 cup, 2 tablespoons fresh basil, 1 teaspoon minced garlic, salt just a pinch and I like a pinch of sugar maybe 1/2 teaspoon
- Just put all in a food processor and puree until smooth. Let chill covered in the refrigerator.
