Cobb Salad Dip Recipe
Cobb Salad is one of the most classic recipes around, so it’s a mystery to us why no one’s ever thought of making it into a dip. We ditched the greens (let’s face it, dips aren’t supposed to be healthy) and bulked up a blue cheese dip with our favorite Cobb fixings (avocado, scallions, herbs, bacon). Serve it with celery sticks if you want to feign healthiness, but it’s equally good with crackers.
What to buy: A tangy blue cheese is in order for this recipe. We would’ve loved to have used Maytag, but it’s hard to get, so we chose Point Reyes blue and were delighted with the outcome.
Game plan: Step 1 can be done up to 1 day ahead and the dip refrigerated in a covered container. Just before serving, chop the avocado, stir the sour cream mixture, and finish step 2.

- 1 cup sour cream
- 1/3 cup crumbled blue cheese (about 2 ounces)
- 2 teaspoons freshly squeezed lemon juice
- 1 teaspoon kosher salt
- 1 teaspoon Worcestershire sauce
- 1 medium avocado, finely chopped (about 1 1/3 cups, cut just before serving)
- 1/4 cup thinly sliced scallions
- 2 tablespoons finely chopped fresh Italian parsley leaves
- 4 slices bacon, well-browned and crumbled
- Celery sticks or assorted crackers, for serving
- Place the sour cream, blue cheese, lemon juice, salt, and Worcestershire in a medium nonreactive bowl and stir until well combined.
- Fold in the avocado, scallions, and parsley, transfer the dip to a shallow serving dish, and top with the bacon. Serve with celery sticks or assorted crackers.

Best. Dip. Recipe. Ever. This dip pleases EVERYONE. Indulge for once! Very male-pleasing dip. But even for females ... Once you get a taste of this dip, you can't stop. Best served with celery stix or Central Market Blue Corn Tortilla Chips. I wouldn't make a single change to this recipe. Other than to double it. Because you will want more.

If it means getting to eat blue cheese and bacon instead of Light Ranch dressing, I'll go with gaining the 3 pounds.
YUCK!!! who wants to gain 3 pounds during the Super Bowl party? NOT ME. We are grilling chicken wings soaked in nothing but Tabasco hot sauce with the Big Green Egg and using Hickory chips to kick the flavor up a notch without adding calories. Celery and Carrot sticks...... then if you want you can use the Light Ranch dressing or LIGHT bleu cheese dressing. You don't have to use full calorie dips for a condiment, duh! After each "alcohol drink" drink a glass of diet soda or water to lighten up your caloric intake through the game. Remain sexy.... even AFTER the big game!
howdy Chow - actually, cobb salad dip, blt dip, cheeseburger dip--pretty much every classic diner food with bacon--has been made into dip since the SIXTIES! A neo-version to make small bites by piping the ingredients into a cherry or strawberry tomato. This is very "recent": Only a single decade since it became commonplace. (snark, snark, snark)
Adding feta could be a bit much with the sour cream. Perhaps omit the sour cream and sub with cream cheese. Then when you add your feta, the flavor combos should be more at a balance. So many delicious variations!! Have fun with it deb =D

We made this as a layer dip and served it with crisp lettuce leaves instead of crackers. Kept the salad theme going and the lettuce provides a low fat alternative to crackers.
In a fit of decluttering a couple of years ago, I gave away the clear glass straight-sided salad bowl I used for layered salads and dips. Since then, of course, I can't seem to open a magazine or look at a Web site without seeing some sort of fabulously delicious sounding layered thing. Curses.

has anyone thought to try this with greek yogurt instead of sour cream? Love the idea of layering...I plan on trying this at our next Happy Hour.
I made this for a party. It was definitely well-received, at a party with way too much food it was the only item that was finishes. I personally felt that the avocado was somewhat lost here in the sour cream/blue cheese combo. People who I wouldn't expect to eat avocado or blue cheese liked this dip. If I did it again I'd probably tweak it to be more of a layered dip and maybe do the avocado layer with some chopped, crunchy veg lightly dressed
I made this (albeit without the tomato and hard-boiled egg) and really enjoyed it! It's super-indulgent with the avocado, bleu cheese, and bacon, but the scallions add a nice fresh bite to all of the creaminess. Definitely would recommend this for a party. Very easy to make.
Yes add the tomato and hard- boiled egg and the idea of layering is great. You could add a small amount of shredded cheese. Serve with tortilla chips.
glad you guys want to add in the tomato and hard-boiled egg. we thought they'd be a little over-the-top for most dip fans but clearly that's not the case! enjoy!
Hmmm...adding the chopped tomatoes and hard boiled egg as vickib suggested, this would work really well as a layered dip and would be very pretty also.
My beloved and I think it also needs chopped hard boiled egg and tomato. I think this might appear at the next party!
