Fennel Gorgonzola Salad Recipe

This is a very easy yet very impressive salad for a dinner party. It’s light texture and the airiness of the fennel pieces give it a cool feel excellent for a summer outdoor meal.

INGREDIENTS
  • 1 fennel bulb with tops
  • crumbled gorgonzola cheese
  • pine nuts
  • white balsamic vinagar
INSTRUCTIONS
  1. Cut off the fennell tops and save for garnish
  2. Cut bulb in half and then make thin slices of the bulb halves creatin thin (about 1/8") pices.
  3. Arrange on a platter in a mound and sprinkle on gorgonzola pieces, pine nuts and sprinkle with white balsamic vinagar.
  4. Garnish the platter with a ring of the lacy fennell tops around the mound of salad
