Spicy Meatloaf Sandwich Recipe

Meatloaf is up there with the world’s greatest sandwich fillings: The tender texture is devastatingly good between two chewy pieces of bread. Combine it with spicy mayo and sweet tomatoes and you’ll be making meatloaf for tomorrow’s sandwiches instead of tonight’s dinner.

INGREDIENTS
- 2 tablespoons mayonnaise
- 1 chipotle en adobo, finely chopped
- 1 large hoagie roll, cut in half horizontally and toasted
- 1 (1-inch-thick) slice meatloaf
- 1 tablespoon finely chopped sun-dried tomatoes, packed in oil
INSTRUCTIONS
- Place mayonnaise and chipotle in a small bowl and mix until well combined.
- Spread half of the chipotle mayonnaise on the bottom half of the roll and top with meatloaf, then tomatoes. Spread remaining mayonnaise on the top half of the roll and close the sandwich. Cut in half and serve.

I was looking for the meatloaf recipe!
This "recipe" depends entirely on the quality of the meatloaf, whidh is extremely variable.
I have a question that may seem strange. Is is safe to freeze a meatloaf sandwich? My kids love meatloaf sandwiches for lunch but sometimes there isnt enough time in the mornings! Is this safe? And almost as important - will they still remain delicious? Has anyone tried this?

Hey! I was just looking for a Superbowl Sunday idea and this looks great! I'm sooo tired of wings and brats. Somethimes I stuff my meatloaf with a good pepper jack cheese. This is going to be a spicy Sunday, I better make sure I have lots of cold beer on hand:)

FINALLY!!! My favorite sandwich on the planet . . . . I always make my meatloaf with a few chipotle peppers minced up in the mix . . . and forget about having it hot for dinner . . . I've always liked mine cold or room temp on fococcia with the works!!!! And don't forget the cheese, please!!!!
Not to diminish this recipe, but I have a hard time believing anything can top a meatloaf sandwich with Sriracha. Just sayin'.

sounds yummy last time i made meatloaf, i used chipotle bbq sause in the mix. delish!
this sandwich sounds great, but i love using my leftover meatloaf in a grilled cheese form.
