Chicken Breasts with Shallots and Green Beans Recipe
I had these ingredients in my fridge and just started to chop and toss everything in and it all came together deliciously! I served it with Quinoa Angel Hair Pasta but it would also go nicely with any rice or grain.
- 1 large Shallot sliced to a medium thin-ness
- 1 Tbsp chopped Garlic
- 1/2 lb String Beans cut into quarters
- 1/2 lb boneless breast of chicken cut into chunks (preferably hormone and anti-biotic free)
- 1 cup Chicken Stock
- 1/4 cup Apple Cider Vinegar
- 2 tsp Oregano
- 2 tsp Rosemary
- 1 Tbsp Unsalted Butter
- 1/4 cup Heavy Cream
- 1/2 cup grated Parmesan Cheese
- Salt and Pepper to taste
- Heat Extra Virgin Olive Oil in a medium sized, heavy bottomed, deep saute pan
- Add Garlic and Shallots and saute them until translucent
- Add Chicken chunks and brown them
- Add String Beans
- Pour in Chicken Stock, Apple Cider Vinegar and herbs and butter and cover the pan
- Steam Chicken and String Beans until chicken is cooked through and bounces back to the touch (about 5 minutes)
- Stir in Heavy Cream and Parmesan, Add Salt and Pepper to taste
- Serve over pasta, rice or a grain of your choice
