Microwave Chocolate Mug Brownie Recipe
This makes a delicious brownie for one in about a minute. I used a 1500 watt microwave. 60 seconds makes a molten center brownie. 75 seconds make a uniformly done brownie. Careful not to overcook.
- 2 Tbs vegetable oil
- 2 Tbs water
- 1/4 tsp vanilla extract
- dash salt
- 4 Tbs granulated sugar
- 2 Tbs unsweetened cocoa powder
- 4 Tbs all purpose flour
- In a 12 oz coffee mug, add water, oil and vanilla. Whisk well.
- Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.
- Microwave for 60 to 90 seconds. Center should be slightly molten. Careful not to overcook.
- Enjoy with a spoon. Careful brownie will be hot.

I doubled the recipe, mixed it in a bowl and microwaved it in separate mugs for me and my girlie. Thanks for the cheap Valentine's Day Eve chocolate fix.
We tripled the recipe and mixed it in a jug then poured it into cafe style coffee cups and zapped in the microwave - 1st one for 1.45 - quite firm, 2nd one for 1.30 - molten centre, 3rd one for about 1.20 - nice, molten top and just done to the bottom. Quite yum considering no eggs used!
I made this 2 minutes ago when I needed a quick chocolate fix. This is great--very easy, fudgy and satisfying. Next time I'll try the molten version, and will probably add just a bit more sugar, and maybe some instant coffee.
