<introduction>

I like this method because it is richer and the chocolate make for a more special treat. You can also make them themed for any occasion.

If you are at all familiar with making Rice Krispies treats you will notice I have upped the butter and this is a double batch.

It is a good idea to measure your Crisp Rice and lubricate your pan and have you food color, if you’re coloring the rice, and vanilla out and ready to go. Once you get the marshmallows in the pot they need quite a lot of attention to keep them from burning or turning brown.

Lubricate 13×9″ pan with butter or non-stick spray. Spraying is easiest, butter tastes better.

Measure out 6 cups of Rice KrispiesTM in to a bowl big enough to hold them.

Melt 4 Tbls butter (1/2 stick) butter in a 6 to 8 qrt pot, over medium heat. Sometimes I use up to 6 Tbls It all depends on how rich I want to make it.

Once the butter has just melted, dump a 1 10oz bag of marshmallows in with the butter. It is best if you keep stirring as much as possible.

It will take a few minutes for the marshmallows to melt, once they do it’s time to add the vanilla and food color. A quick note about the food coloring; depending on how dark you want the Krispies to appear you will need a lot of food color, maybe ¼ to ½ of a bottle.

Once the food color is all mixed in, turn off the burner and dump in the Rice Krispies. Fold them in until everything is well mixed.

Then dump it in to the 13×9″ pan. You will now need to press them down flat. I usually use the wax paper from the butter. You can also spray your fingers with the non-stick spray.

Next put the chocolate chips into the microwave safe bowl (glass works best) then place the bowl into the microwave and microwave on high for about 15 to 20 seconds. Then check to see if they have stared to melt. It may take 2 to three cycles of 15 to 20 seconds. Don’t be temped to let it run. It’s very easy to burn the chocolate. Stir the chocolate chips after every cycle and stop once they have melted.

Pour the melted chocolate over the first layer for Krispies, using a rubber or silicone spatula to even it out. No comes the best part. Lick the bowl and spatula clean of all chocolate residue.

Now make the second batch of Rice Krispies. If you are coloring make this batch a different color than the first. Pour it over the first batch and smooth this one out too.

Let them cool and cut them into one inch squares. I know these seem a little small but remember they’re twice as thick and they have chocolate in the middle.

Enjoy!
