2 large salads or 4 small dinner salads
Figs are easy to use and delicious with the right Fall pairings!
INGREDIENTS
- Fresh Figs (quartered)
- Red & Green leaf lettuce mixture
- Prociutto (diced) or thinly sliced smoked ham
- Ripe, yellow pears (diced)
- Goat or Brie Cheese (cut into bite-size pieces)
- Blackberry Balsamic Vinegar (or regular if not available) http://www.bestbalsamicever.com/services.html
- Olive Oil
- Optional: Cantalope (diced) & Pomegranate Seeds
INSTRUCTIONS
- Toss with Basalmic Vinegar & Olive Oil and enjoy!!!!

Why couldn't one use fig balsamic vinegar? Would that be just too much of the fig flavour? I do love the idea of the pomegranate seeds. I might give it a try, as I do have an almost full bottle of the fig balsamic vinegar that I'm trying to figure out more uses for. (I bought it for a fig compote, but it only used 2 TBSP, and while good, I don't want it every day.
