Gluten Free Orange Cake Recipe

This is my gluten free version of Claudia Roden’s Gateau a l’Orange. This moist festive cake makes an ideal dish for holiday celebrations.

INGREDIENTS
  • 2 oranges
  • 4 eggs
  • ¾ cup agave nectar
  • 2 cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • 1 teaspoon baking soda
INSTRUCTIONS
  1. Wash the oranges and boil them whole for 1 ½ hours, or until soft
  2. Place oranges in a food processor and blend until smooth
  3. Process in eggs, agave, almond flour, salt and baking soda until well blended
  4. Pour batter into a greased 9-Inch round cake pan
  5. Bake at 375° for 45-50 minutes, until a toothpick stuck in the center comes out clean

  • I mean I whipped the egg whites and folded them in after everything else was combined instead of using baking soda

  • I also used eggwhites instead of baking soda

  • I tried this recipe and it was fantastic. I used maple syrup instead of agave syrup.

  • Do you know of any substitutions for the agave nectar? It doesn't have to be gluten-free.

  • I am always looking for recipes for GF baked goods. I have Fibromyalgia and I can't eat baked goods with gluten.
