Zatar Chicken with Onions & Sweet Potatoes Recipe
This dish was inspired by the fragrance of zatar and how easy oven chicken dishes can be. This is a nutricious and lowfat dinner.
- 1 medium onion (cut in medium thickness crescents)
- 3-4 Sweet Potatoes (cubed)
- 4 teaspoons zatar
- 3-5 pieces of Pita bread (whole wheat)
- 2-3 lbs. Chicken (I used boneless/skinless thighs, but you can use a whole chicken cut up or any other chicken cut desired or on hand)
- 1 tablesppon Olive oil
- Salt and pepper to taste
- Preheat oven to 475 degrees. In the meantime, begin by cubing sweet potatoes and cutting onion into medium thick crescents. Brush the bottom of a 11X14 oven dish (or any other oven-proof dish) with olive oil.
- Cut open pitas and tear off pieces; place on the bottom of oiled dish.
- Place cubed sweet potatoes and onions over torn pita pieces
- Sprinkle 2 teaspoons of zatar spice over everything
- Place chicken pieces over vegetables and pita (their should be three “layers:” pita pieces, sweet potatoes & onions and chicken)
- Season chicken and in between generously with salt and pepper

if we add onion juice will be more delicious
