INGREDIENTS
- 1/2 cup low-fat buttermilk, shaken well
- 1/2 cup sour cream
- 1/4 cup fresh Italian parsley leaves, minced
- 1 tablespoon white vinegar
- 1 medium garlic clove, minced
- 2 tablespoons fresh chives, minced
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
INSTRUCTIONS
- Place all ingredients in a medium nonreactive bowl and whisk until smooth and evenly combined. Taste and adjust seasoning as desired.
Made this for use over yellow carrots and it has a real zing from the garlic. I bet it would be good with fish too
Good dressing, but definitely needs sweet for a balanced flavor. Next time, I think I'll swap1 tsp mirin in the Tbl white vinegar. Also, I realize tarragon is not to everyone's taste, but for me, 1/2 tsp very finely minced really made this a "taste treat", esp. with lightly steamed carrots.
Thanks, Ms. Mollenkamp
Bessa, your problem is that you used the wrong kind of salt. Kosher salt measures differently from regular table salt. That's why when a recipe calls for a certain amount of table salt, you always have to add more kosher salt. Here, you tried adding the same amount of table salt for kosher, and it tasted too salty.
careful with the salt. I used regular (not kosher) salt and 1/2 tsp was too much. add minced garlic a little at a time so you can taste test it before incorporating all of it.
