This recipe has been become a holiday staple in the Doyle house. Tweaks have been made over the year but the recipe below is closest to what Nana Doyle clipped out of her 1950’s Ladies Home Journal.
While the mix of ingredients may seem strange at first don’t judge until you taste!
- 1Boil yams until soft. Strain water and mash yams. Season with salt, pepper and cinnamon to taste. Allow to cool.
- 2Once cool take yam mixture and surround a large marshmallow until marshmallow is completely covered.
- 3Once covered roll in corn flakes. Top with a dab of butter and cook at 350 for 30 mins- or until marshmallow has dissolved. Serve and enjoy!
