Comfort Cauliflower Soup Recipe

When the weather is chilly and I want a hot bowl of soup but don’t want to do anything complicated, this is the trick!
INGREDIENTS
- 1 large head cauliflower
- 1 large onion, chopped
- 2 large cloves garlic, chopped
- 2 cans low sodium chicken broth
- 1 bay leaf
- 1/2 tsp tumeric
- 1/4 tsp nutmeg
- 1/4 tsp cayenne pepper
- kosher salt and fresh pepper to taste
- 1/4 cup cream
- 1 TB olive oil, not virgin
INSTRUCTIONS
- Saute on medium heat the onion in the olive oil for 5 min until transluscent (not brown!)
- Add the garlic and cauliflower florets. Saute 5 min more.
- Add broth, bay leaf and spices. Lower heat to simmer and cook gently for 20 mins.
- Puree soup.
- Add cream. Enjoy!
