Comfort Cauliflower Soup Recipe

Difficulty: Easy | Total Time: 30 min | Makes: 4-6 servings

When the weather is chilly and I want a hot bowl of soup but don’t want to do anything complicated, this is the trick!

INGREDIENTS
  • 1 large head cauliflower
  • 1 large onion, chopped
  • 2 large cloves garlic, chopped
  • 2 cans low sodium chicken broth
  • 1 bay leaf
  • 1/2 tsp tumeric
  • 1/4 tsp nutmeg
  • 1/4 tsp cayenne pepper
  • kosher salt and fresh pepper to taste
  • 1/4 cup cream
  • 1 TB olive oil, not virgin
INSTRUCTIONS
  1. Saute on medium heat the onion in the olive oil for 5 min until transluscent (not brown!)
  2. Add the garlic and cauliflower florets. Saute 5 min more.
  3. Add broth, bay leaf and spices. Lower heat to simmer and cook gently for 20 mins.
  4. Puree soup.
  5. Add cream. Enjoy!
