Cheeseless, Gooey Baked Mac Recipe

I love the contrasting textures of soft, gooey and crunchy and pasta is a total comfort food. However, my dislike of cheese kept me away from “attacking the mac” until recently when I discovered I can make a baked mac…sans cheese! Trust me- even for cheese lovers, this is a great healthier alternative for a side or entree.

INGREDIENTS
  • 10 oz elbow pasta
  • 1 1/2 cups 2% milk
  • 2 TB cornstarch
  • 1/2 tsp fresh grated nutmeg
  • 1/2 tsp ground mustard
  • kosher salt & pepper to taste
  • 1/4 tsp cayenne (or more to taste)
  • 1 TB butter
INSTRUCTIONS
  1. Boil the pasta in salted water for 6 min, The pasta will be undercooked but it will soak up the sauce later.
  2. Melt butter on low heat. Add 1 cup of milk and bring up to a simmer (not a boil). Dissolve cornstarch in 1/2 cup of milk. Slowly whisk into the hot milk. Stir constantly until it thickens. Take off heat and add spices.
  3. Mix the pasta with the aauce. Place in a buttered baking pan and place under the broiler until the top browns. With a spatula turn the pasta over (so you can crisp the other side). Place back under the broiler until browned and crisp.
