Poutine's Recipe

French Potato Dumplings

INGREDIENTS
  • 10 lbs. grated potatoes - drained
  • 2 1/2 lbs. cooked potatos - mashed (can be prepared in advance)
  • 2-5 lbs. hamburger or ground pork (form into small meatballs in advance)
  • salt pork cut into 1/2" pieces (if using hamburger - press into prepared meatballs)
  • culinary cheese cloth pre-cut into 5" x 5" squares (or larger)
  • cheese grater
INSTRUCTIONS
  1. grate potatos and mix mashed potatos with grated – add salt to taste
  2. using prepared meatballs, form into larger snowball like balls by covering prepared meatballs with potato mix – cover about 1" thick around ball
  3. place into center of cut cheese cloth and tie corners together diagonally
  4. drop into boiling water and simmer 3-4 hours until center meatball is cooked through

  • Have never heard of this or seen it on a menu. Guess it didn't t namely to the midwest.

  • I was excited at first...you don't see individual recipes for poutine...but then I exclaimed "hey! wait! that's not poutine!"..Thank you pmartin for clarifying that it's different and probably a prequel to what I know and love as poutine....that said, I can't wait to try and make it.

  • I would guess that 1 hour would cook the meatball through -- so the extra 2 to 3 hours are to make sure every last speck of flavor or nutrition is leeched out into the water?

  • This is what we call Poutine Râpé. A Poutine is French Fries, cheese, topped with gravy...some add chicken for a Chicken Poutine...very popular in Canada. To add to taste of the Poutine Râpé, many eat it with sugar, mustard or ketchup. I like good old salt.

  • I had something like this in New Orleans. Meat ball inside potato coating, the whole ball was about 2 inches across and it was deep-fried. LOTS of seasoning in the meat, just salt and white pepper in the potato coating. Yum and double yum!

    What size are the meatballs?

    Why is the meat not seasoned at all ? I think herbs and spices would add to the taste - S&P, garlic, thyme, etc.
