Velveting Chicken Marinade Recipe

Here’s the recipe for the marinade Jed Kolko describes in his “velveting chicken” CHOW Tip. The quantities below are for one pound of chicken meat.
- 1 egg white
- 1 tablespoon Shaoshing cooking wine
- 1 teaspoon kosher salt
- 1 tablespoon cornstarch
- Beat ingredients in food processor until frothy.
