Velveting Chicken Marinade Recipe

Here’s the recipe for the marinade Jed Kolko describes in his “velveting chicken” CHOW Tip. The quantities below are for one pound of chicken meat.

INGREDIENTS
  • 1 egg white
  • 1 tablespoon Shaoshing cooking wine
  • 1 teaspoon kosher salt
  • 1 tablespoon cornstarch
INSTRUCTIONS
  1. Beat ingredients in food processor until frothy.

    thanks for your useful recipe . But you did not mention how I will use the marinade ; how I will velvet the chicken with the marinade ? Appreciate if you describe the whole process details , step by step. Should I boil in water or fry in oil for the velveting ? Also need to know if the marinade is for small pieces or medium pieces or whole chicken . And marinade time? Is the marinade recipes is for stir fry with chicken and prawn?
