    <![CDATA[<p>When you need to cool the summer down or brownies would be too heavy try a little homemade granita. You can make granita with practically any liquid but I LOVE watermelon granita as it is not a flavor you normally see.</p>]]>

	<li>Cut up the watermelon and remove the rind (you can save the rind and pickle it&#8230;mmmm).</li>
		<li>put the pieces of watermelon in a bowl and crush (potato masher works wonders)</li>
		<li>Put the mash into a strainer and strain the seeds and pulp out, saving the liquid.</li>
		<li>Add the juice of one lime (or more, to taste)</li>
		<li>Add the salt and sugar</li>
		<li>Reduce in a saucepan over a LOW heat until you are happy with the flavor and the sugar has dissolved. </li>
		<li>Place into the freezer. </li>
		<li>Stir ever 1/2 hour or so with a fork. Be sure and scrape the sides</li>
		<li>Just before I serve I whip mine until I get the texture I like. </li>
		<li>You can substitute any liquids. Some traditional flavors are; berry, coffee, lemon, lime. To get the texture you like you can do any (or all) of the following</li>
	</ol>


	<p>1. more sugar = less frozen (smaller crystals)
2. more salt = less frozen 
3. more frequent stirring= smaller crystals</p>
