	<li>Preheat the fat in a large skillet to 375&deg; F.</li>
		<li>In a bowl, combine the flour, sugar, baking powder, cinnamon, and salt. In a small bowl, beat the eggs, egg yolk, and milk until well mixed. Gently stir the liquid ingredients into the dry, along with the melted butter. Mix until just soft enough to handle. Turn onto a well-floured board and press into a flat cake. Roll gently to about a 1 inch thickness. Cut out with a floured doughnut cutter. Cut scraps into 1 inch balls. (It is best not to reroll the dough. Cook the small pieces separately.)</li>
		<li>Fry doughnuts until golden on both sides. Drain on paper toweling. Once fried, the doughnuts should be served or frozen.</li>
		<li>Plain doughnuts can be rolled in granulated sugar or cinnamon sugar, frosted, or dipped in a thin coating of confectioners&apos; sugar and water, if desired. (See page 166.)</li>
		<li>Note: The dough will be very soft and can be patted into shape without using a rolling pin.</li>
