	<li>Rinse the mushrooms in a colander, drain well, and dredge in the flour. In a medium bowl, beat together the eggs, water, olive oil, salt, and pepper. In another bowl, combine the bread crumbs and thyme.</li>
		<li>Heat the oil to 360&deg; F. in a saucepan. Dip the mushrooms in the egg mixture, then roll in the bread crumbs. Fry until golden and drain on paper toweling. Serve immediately.</li>
		<li>The mushrooms can be prepared for frying the night before and kept on a cake rack in the refrigerator. They must be served immediately after frying.</li>
		<li>Note: Do not fill the saucepan more than half full of oil.</li>
