	<li>Preheat oven to 350&deg; F.</li>
		<li>In a food processor, grind the salmon into a puree. With the machine running, add the egg whites and gradually pour in the cream. Add the salt and cayenne and mix well.</li>
		<li>Butter a 1&frac12;-quart mold and fill with the salmon mixture. Place in a water bath and bake for 35 to 40 minutes, or until a knife tests clean. Unmold onto a serving platter. Coat with Hollandaise, arrange mushroom caps around the outside edge, and sprinkle with minced parsley.</li>
		<li>Can be prepared for baking the night before.</li>
