  • In a 2-quart saucepan, heat 1 quart of oil to 375° F. In a plastic bag, combine flour, salt, and pepper. Mix well. Toss the fish in the flour to coat lightly and shake off the excess. Immediately deep fry until golden. Drain on paper toweling. Serve immediately with lemon wedges on the side. Do not try to cook ahead.
