	<li>Preheat broiler.</li>
		<li>In a 9-inch skillet, saute the apples in butter and 1 tablespoon Calvados until tender. Prepare omelets, fill with apples, fold, and turn onto a heatproof platter. Sprinkle omelets with sugar and glaze until golden brown. Flame with the remaining Calvados. Serve immediately.</li>
		<li>Note: To flame the Calvados, warm it in a small saucepan over low heat. Pour over the omelet and ignite with a match. Make sure that it is not too close to you or your guests. You may substitute almost any fruit for the apples and will probably wish to change the liqueur as well. For example, Grand Marnier with oranges or strawberries, kirsch with strawberries or raspberries, and rum with peaches or grapes.</li>
