  • In a 9-inch skillet, saute the mushrooms in the butter until the liquid has evaporated. Season lightly with salt and pepper. Stir in port and cream and reduce by half. Correct seasoning with salt and pepper. Add lobster and reheat gently. If you boil it, the lobster will be tough.
  • Prepare the omelets and fill with lobster mixture. Serve immediately.
